Instead of giving up, they relocated their stall to a busy intersection, recognizing the immense potential of the high foot traffic. Despite the temporary setback, he continued to pay the rent, waiting for the right opportunity. Inspired by the success of a nearby bakery, he decided to pivot to serving hot snacks. He introduced items like chili beans, tacos, and roast meat sandwiches. To attract customers, he utilized clever sensory marketing: during cold winters, the steam rising from his large pots of corn soup created a warm and inviting atmosphere for passersby.
The shop's presentation was also key to its success. With a clean white stove and his wife dressed stylishly and neatly, they created a welcoming environment. This unique approach allowed them to thrive even as many luxury restaurants collapsed during the economic downturn. By 1932, the business had expanded to seven locations.
After nearly 30 years of relentless effort, the man who once struggled in poverty built a massive empire with nearly a thousand restaurants, over 30,000 employees, and annual revenues of approximately $400 million. This miracle was achieved by John Merritt, the founder of Merritt Company.
